"Autumn Recipes"

Ayurveda in the autumn: The fall season and the doshas: vitiates vata, pacifies pitta and kapha. Favor warming, grounding and denser foods: dates, figs, strawberries, beets, okra, green beans, pumpkin, and sweet potatoes.

Warming Vegetable Barley Soup

1 cup barley
4 cups vegetable broth
1/2 cup of sliced onions
1/2 cup of chopped carrots
1/2 cup of asparagus
1/2 cup of celery
1/2 cup of leeks
1 teaspoon cumin
1 teaspoon garam masala
1/4 cup ghee, sunflower oil, or olive oil

*serves 2-3

In a medium pot, add barley to vegetable broth and bring to a boil. Lower heat to medium/low and let cook for 5-10 minutes or until soft. Heat oil in a separate pan and add onions. Caramelize onions then add cumin and garam masala. Add asparagus, celery,

Chickpea Chickpea Chickpea

1 cup Chickpeas (or 1 can)
1 onion
1 tomato
1 clove garlic
1 inch fresh ginger
1 tablespoon cumin
pinch of chili powder
1 teaspoon garam masala
2 pieces bay leaf
1/2 cup yogurt
lemon juice (to taste)
1 tablespoon oil
1/4 cup chopped cilantro
1/2 cup water

Soak chickpeas overnight (or use canned chickpeas). Pressure cook chickpeas with a tea bag in the pot and then discard tea bag. In a separate pan heat 1 tablespoon of oil, add bay leaf, onion, tomato, garlic, fresh ginger, cumin, chili.

Date Almond Milk

2 cups milk
3 dates
6-9 almonds (preferably soaked
overnight and peeled)
pinch of cardamom powder

Chop dates and almonds. Remove pits of dates. Grind dates, almonds, and milk in a blender. Drink cold or warm by heating on a stove for a hot winter beverage. Add cardamom.
